Touchdown-Dance Vegetarian Recipe

Vegetarian recipes are hard. Especially for me, who shouldn't eat a whole lot of, if any, dairy. So when I find a great (and I mean, great!) vegetarian recipe that my husband and child will eat, feel full from and not complain about when it's on the menu in the future, I want to do the homekeeper's equivalent of a touchdown dance. I stumbled upon this recipe on Rachael Ray's website, and for Brit, I'll contain my urge to write about how much I love Rachael Ray. The link to the original page is here; please try and enjoy this!
